Lindsay Corby’s passion for winemaking began early, with fruit winemaking experiments while still at high school.

In 1985, he discovered his first vineyard and developed a deep love for grapes and wine, leading him to study Viticulture and Wine Science at Charles Sturt University.

Over the years, Lindsay gained extensive experience in cellar door sales, laboratory work, and vineyard management, giving him a complete understanding of wine production from paddock to palate.

Since 2001, he has focused on developing undergraduate and postgraduate wine courses at La Trobe University, managing the campus vineyard, and supervising student project wines to stay connected to the seasons and evolving winemaking trends.

Building on his expertise and love for quality produce, Lindsay has taken over and rebranded the onsite restaurant to Casa Bianchet, giving the opportunity to showcase the Bianchet Vineyard and Cosmo WInes with a fresh high quality dining experience.

The restaurant showcases the best local produce from the Yarra Valley and pairs it with exceptional wines grown and produced onsite, creating a seamless experience that celebrates both food and wine in the heart of the region.
